fix: replace Espo.Utils.escapeString with jQuery text escaping

Espo.Utils.escapeString does not exist in EspoCRM 8.x, causing
TypeError crash when clicking dashlet cards. Use jQuery .text().html()
for XSS-safe HTML escaping instead.
